3 oz - Chicken breast, boneless/skinless, raw
1/2 med (2-3/4 inch) - Tomatoes, red, raw
18 whole - Tortilla chips, unsalted, white corn
1/4 cup - Salsa, low sodium, ready to serve
2 oz - Cheese, cheddar, low-fat
1. Dice chicken breast. Heat a skillet over medium heat and saute chicken breast until cooked through.
2. Dice tomato. Top tortilla chips with shredded chicken, diced tomato,
and shredded cheese. Heat in the toaster oven or microwave until cheese
is melted. Serve with salsa for dipping.
Tip: 2 oz. Cheddar cheese = 1/2 cup shredded.
