Ingredients

    3 1/2 oz - Beef, ground, 95% lean meat / 5% fat, raw
    1 slice(s) - Bread, whole wheat
    1/4 med (2-1/2 inch) - Onions, raw
    4 oz - Tomato sauce, canned, meatless, no salt added
    4 oz - Vegetables, mixed, fresh/frozen
    1 large - Egg, whole

INSTRUCTIONS

1. Preheat the oven to 375F. Crumble slice of bread into bread crumbs. Dice onion.

2. Gently combine ground beef, bread crumbs, egg, and diced onion. Wet your hands and form into meatballs. Brown the meatballs on the stove, and finish cooking in the oven for 20 minutes, or until the meatballs are cooked through and reach an internal temperature of 165F.

3. Place a steamer insert in a saucepan and fill with water to just below the bottom of the steamer. Cover and bring water to a boil. Place mixed vegetables of your choice in steamer insert and cover. Steam for about 5 minutes or until tender.

5. Top meatballs with warmed tomato sauce and steamed mixed vegetables.

Tips: 1/4 whole onion = 1/4 cup chopped; 4oz tomato sauce= 1/2 cup; 4oz  mixed vegetables= 1 cup; 3 1/2oz beef= size of 1 1/4 decks of cards
