Ingredients

    3 1/2 oz - Beef, sirloin, raw
    1 tsp(s) - Olive Oil
    1/2 med (2-1/2 inch) - Onions, raw
    1/2 clove - Garlic, raw
    1 fl oz - CAMPBELL'S, V8 Vegetable Juice, low sodium
    1/8 tsp - Sauce, worcestershire
    1/2 fl oz - Wine, red, table
    null - Parsley Parsley
    1/4 tsp(s) - Cornstarch
    2 oz - Pinto Beans, cooked/canned, no salt added
    1 stalk, med (8 inch) - Celery, raw
    1 med (6 inch) - Carrots, raw
    1 med (2-1/2 inch dia) - Bell Peppers, green, raw
    1/2 cube - Beef broth or bouillon, reduced sodium

INSTRUCTIONS
1. In a skillet over medium heat, brown beef in olive oil.

2. Place meat and drippings in a large crock pot. Place vegetables on top of meat.

3. Mix liquid ingredients and parsley and pour into crock pot. Cook on high for 7 to 9 hours.
4. One hour before serving, mix cornstarch with 1 Tbsp. water, stir until smooth. Stir into stew and mix well.

5. Before serving, taste and adjust seasonings, if necessary.

Tips: 2oz pinto beans= 1/4 cup; 3 1/2oz sirloin= size of 1 1/4 decks of cards; 1/2 fl oz wine= 1 Tbsp; 1 fl oz vegetable juice= 2 Tbsp
