Ingredients

    3/4 oz - Cheese, cheddar, low-fat
    2/3 cup(s) - Egg Substitute
    1 spray, 1/3 sec - Oil, PAM cooking spray, original
    1/4 med (2-1/2 inch) - Onions, raw
    1/4 med (7-1/2 oz) - Potato, raw
    1/4 med (2-3/4 inch) - Tomatoes, red, raw
    1 links - Veggie sausage link(s) (1 link is 80 calories)
    1 8 inch - Tortilla, whole wheat

INSTRUCTIONS

1. In a medium saucepan, bring water to a boil. Peel potato and cut half of potato into 1-inch pieces. Place potatoes in pot and cover. Reduce heat to medium and cook for about 10 minutes or until tender but still firm. Drain and cool.

2. Dice onion and tomato. Warm a skillet over medium heat and spray a pan with cooking spray. Add diced onion, veggie sausage link and cooked and cubed potato. Let cook until the onion is softened and the potato is warm throughout. Stir in diced tomato and pour in egg substitute, stirring to scramble. Sprinkle with shredded cheese, and wrap in tortilla.

Tips: 1/4 whole onion= 1/14 cup chopped;  1/4 whole tomato= 1/4 cup chopped; 3/4 oz low fat Cheddar cheese=  3 Tbsp shredded
